Research Topics:
Food safety, is a public health priority. Bacterial contamination during food processing can be limited by the use of processes (sterile room…) which are currently developed by the food industry. Raw food is thus among the main sources of bacterial contamination in the food chain. In this context, the research team focuses on bacteria that contaminate food raw materials from animal origin and that can be transmitted to humans. Among pathogenic bacteria, priority is given to Listeria, and Salmonella. Both bacteria are facultatively intracellular and their main route of entry into the body is through the digestive tract. Asymptomatic animal carriers, i.e. animals harbouring potentially pathogenic bacteria without developing clinical signs, are the main source of contamination by Salmonella and Listeria. The mechanisms at the origin of the persistence of bacteria within a host remain poorly understood. The main aim of our team is to understand the mechanisms of virulence and persistence looking at both pathogen and host sides. Concerning Listeria we especially focuse on the low virulence L. monocytogenes strains
